Protein Yogurt Pancakes

 

Ingredients

  • 1 ½ cups plain whole milk greek yogurt

  • 1 ½ cups unsweetened vanilla almond milk

  • 3 eggs

  • 3T coconut sugar

  • 4 tsp vanilla

  • ¼ tsp almond extract

  • 3 ¾ cups rolled oats

  • 6 tsp baking powder

  • ¾ tsp salt

Procedure

Combine all the ingredients into a blender and blend on high until smooth. Leave the batter in the blender for 10 minutes to thicken. This will give you the fluffiest pancakes. Cook in a skillet or griddle over medium heat. Add a tiny bit of butter to prevent sticking. You could add chocolate chips or blueberries.
