Chocolate Spinach Muffins

Sometimes you just want pancakes or muffins. These are some options to satisfy the craving without going crazy with refined flour. Oats replace the need for flour in these recipes.

 

Ingredients

  • 1 ½ cups rolled oats

  • ½ cup cocoa powder

  • ⅓ cup coconut sugar

  • 1 ½ tsp baking powder

  • ½ tsp baking soda

  • 1 cup plain greek yogurt

  • 2 very ripe bananas

  • 2 large eggs

  • 3 handfuls of fresh baby spinach

  • ½ cup chocolate chips

Procedure

Preheat the oven to 350 degrees. Put the oats in a blender and blend until flour consistency.  Pour into a mixing bowl and combine with the other dry ingredients. In the blender add the spinach, yogurt, eggs, and banana and blend until smooth. Pour into the dry ingredients and combine. Fold in the chocolate chips and pour into a lined muffin pan. Bake for 15 minutes. Allow to cool for 10 minutes.
