Happy Sal-Monday!

Easy, filling, and so good you’ll forget you’re eating healthy

“Sal-Monday” Or “Salmon on Mondays'' has become a staple dinner in the Lindemann household. Starting the week on a healthy note sets the tone and gets the week off to a great start. I keep my salmon easy. No recipe is required, but here are some general guidelines. I like to switch it up every time. I supplement the salmon with Jasmine Rice, Broccoli, Sautéed Spinach, or even sweet potatoes.

  • Wild salmon

  • Teriyaki sauce (preferably a low sugar variety such as Primal Kitchens)

  • Jasmine rice

  • Coconut milk

  • Sea salt

  • Lemon or lime juice

  • Any green vegetable

  • One clove of garlic

  • Olive oil

Procedure

  • Drizzle teriyaki sauce over salmon and bake at 375 for 20-ish minutes or until the fat starts to emerge. 

  • Serve with Jasmine Rice.  Cook 1 cup rice with 1 cup canned coconut milk and ½ cup water.  Add 1 tsp sea salt.  Juice 1 lime and mix into cooked rice.  

  • Steam broccoli and sprinkle with Everything Bagel Seasoning.

  • Sauté one clove chopped broccoli in olive oil.  Add spinach until just wilted. Drizzle with lemon juice.
